RASPBERRY-WHITE CHOCOLATE LOVER'S LOAF


If you’re looking for a sweet treat to serve to your Valentine (or galentines!) this year, my Lovers Loaf is a must-try. Tart raspberries cut through the sweetness of the white chocolate for well-balanced flavor, while a deliciously light, moist sponge melts in your mouth. Serve warm with fresh raspberries, as well as ice cream or greek yogurt and your guests are guaranteed to fall head over heels.  

 

1 1/2 cups cake flour

1/4 tsp salt

1 tsp baking powder

1/4 tsp baking soda

1/2 cup granulated sugar

1/2 cup unsalted butter

2 eggs

1/2 cup milk (I used whole)

1/2 cup white chocolate

1/2 cup raspberries

 

Frosting / Icing

1/4 cup heavy cream

1/4 cup unsalted butter

1/2 cup powdered sugar

1/4 cup white chocolate (melted)

 

  1. Preheat the oven to 350 and line a loaf pan with parchment paper.

  2. Sift flour, baking powder, baking soda, and salt. Set aside.

  3. Add butter and sugar to a stand mixer or whisk until light and fluffy.

  4. Add vanilla and eggs, then add dry ingredients with milk — alternating between adding milk, dry, then milk (be careful not to over-mix to ensure a light texture). Fold in raspberries and white chocolate.

  5. Pour batter in your prepared loaf pan and bake  for 45-60 mins. Cool for 5-7 mins and transfer to a wire rack to cool before icing.

  6. For icing, place chocolate in a bowl and microwave at 20 second intervals until melted. Add in your butter to the melted chocolate and mix until smooth. Add powdered sugar, then cream, and mix again until smooth.

  7. Drizzle your icing over the loaf and top with raspberries. Slice, and enjoy!
