If you ask Sydney, no Thanksgiving is complete without green bean casserole. The unsung hero of the holiday, this classic dish is not only creamy, crunchy, and a total comfort food, but it’s also totally foolproof — perfect for impressing everyone at friendsgiving or your family feast (without breaking a sweat in the kitchen).
That said, Sydney is taking you back to basics with this one. No cans or packets here, we’re going all-in on real ingredients, like fresh thyme, gruyere and a rich, homemade mushroom sauce. The ultimate blend of nostalgic flavor and modern flair, this casserole will give you major bragging rights when everyone goes back for seconds.

Green Bean Casserole
Prep time: 25 mins
Cook time: 30 mins
Ingredients
— Canola
— 3-4 Shallots — 1/2 cup flour
— 2 1/2 tbsp unsalted butter— Oil for frying— I shallot— 3/4 cup diced mushrooms
— 3 garlic cloves, minced
— 2 tsp fresh thyme
— 3 tbsp flour
— 2 cups fresh green beans — 2 ⅓ cup vegetable stock (broth)— 1/2 cup heavy cream • i cup white cheddar— 1 cup white cheddar cheese, grated
— 1 cup gruyere cheese, grated
— Kosher salt + black pepper
Directions
— Heat canola oil in a frying pan on med-high until HOT!
— Working in batches, cover diced shallots in flour, separating and coating.
— Add shallots a handful at a time to the hot oil until crispy and golden for 3 mins. Transfer to a paper towel lined plate.
— Melt butter in a fresh fry pan, add shallot and mushrooms, until tender.
— Add in garlic, thyme, flour and cook for 1 minute. Stir in vegetable broth and bring to a boil, reduce heat and simmer for 5 mins.
— Stir in green beans, cooking for 10 minutes until tender.
— Remove from heat, stirring in heavy cream and 1/2 cup of each cheese. Season with salt and pepper.
— Pour mixture into your baking dish of choice. Top with remaining cheeses and bake at 350°F for 20 minutes.
— After 20 minutes, add fried shallots and place back in the oven for 10 mins until golden.
— Serve hot and enjoy.
